Ingredients
- 600-700g of Fatty Beef
- 1 Large Yellow Onion
- 1 Piece of Ginger (50g)
- 1 Lime
- 3 Tbsp Fish Sauce
- 20g Sugar
- 5g Salt
- 2 Star Anise
- 1 Cinnamon Stick
- 3 Cloves
- 1 tsp Coriander Seeds
Instructions
- On a Cast Iron Skillet (or a flame) Char your Onion, cut in half, and your Ginger
- In the same dry pan, Toast your aromatics for 1-2 minutes
- Pat your beef dry and season it, then Brown it on all sides with some oil in the Skillet for 2-3 minutes per side
- In a large pot, mix:
- 3 Litres of Cold Water
- Onion and Ginger
- Toasted Spices
- Browned Beef
- Bring to a simmer then immediately reduce to low, so just a few bubbles come to the surface
- Skim the scum off the surface for the first 30-60 minutes to keep the broth clear
- Simmer very gently for 2-3 hours
- Strain the Broth and remove any Aromatics, as well as the meat
- Season the Broth with:
- 3 Tbsp Fish Sauce
- 20g Sugar
- 5g Salt
- Juice of Half a Lime
- Taste and adjust salinity, acidity and sweetness, then simmer for another 15-20 minutes
