Vietnamese Pho

Ingredients

  • 600-700g of Fatty Beef
  • 1 Large Yellow Onion
  • 1 Piece of Ginger (50g)
  • 1 Lime
  • 3 Tbsp Fish Sauce
  • 20g Sugar
  • 5g Salt
  • 2 Star Anise
  • 1 Cinnamon Stick
  • 3 Cloves
  • 1 tsp Coriander Seeds

Instructions

  1. On a Cast Iron Skillet (or a flame) Char your Onion, cut in half, and your Ginger
  2. In the same dry pan, Toast your aromatics for 1-2 minutes
  3. Pat your beef dry and season it, then Brown it on all sides with some oil in the Skillet for 2-3 minutes per side
  4. In a large pot, mix:
    1. 3 Litres of Cold Water
    2. Onion and Ginger
    3. Toasted Spices
    4. Browned Beef
  5. Bring to a simmer then immediately reduce to low, so just a few bubbles come to the surface
  6. Skim the scum off the surface for the first 30-60 minutes to keep the broth clear
  7. Simmer very gently for 2-3 hours
  8. Strain the Broth and remove any Aromatics, as well as the meat
  9. Season the Broth with:
    1. 3 Tbsp Fish Sauce
    2. 20g Sugar
    3. 5g Salt
    4. Juice of Half a Lime
  10. Taste and adjust salinity, acidity and sweetness, then simmer for another 15-20 minutes
