Dashi

Ingredients

  • 5g Kombu
  • 30g Bonito Flakes
  • 1 Litre Water

Instructions

  1. Wipe the Kombu with a wet cloth to remove excess salt or debris
  2. In a pot, add:
    1. 1 Litre Water
    2. 5g clean Kombu
  3. Let soak for 1h
  4. Place the pot over Medium heat and as soon as bubbles start to form, remove the Kombu
  5. Bring to a gentle boil and add 30g Bonito Flakes
  6. Simmer for 1-2 minutes, until the Bonito Flakes sink to the bottom of the pot
  7. Remove from the heat and strain through a fine mesh sieve
  8. Use immediately or keep in an airtight container for later use
