Ingredients
- 5g Kombu
- 30g Bonito Flakes
- 1 Litre Water
Instructions
- Wipe the Kombu with a wet cloth to remove excess salt or debris
- In a pot, add:
- 1 Litre Water
- 5g clean Kombu
- Let soak for 1h
- Place the pot over Medium heat and as soon as bubbles start to form, remove the Kombu
- Bring to a gentle boil and add 30g Bonito Flakes
- Simmer for 1-2 minutes, until the Bonito Flakes sink to the bottom of the pot
- Remove from the heat and strain through a fine mesh sieve
- Use immediately or keep in an airtight container for later use
