Ingredients
- 1 Litre Whole Milk
- 3 Vanilla Sticks (3 tbsp Vanilla Extract)
- 40g Sugar
- 4 Egg Yolks
- 20g Cornstarch
Instructions
- Pour 1 Litre of Milk and vanilla seeds from 3 Vanilla Sticks in a pan
- Bring to a simmer and let cook for 10-15 minutes, without letting it boil
- In a bowl, mix:
- 4 Egg Yolks
- 40g Sugar
- 20g Cornstarch
- Mix until homogenous then add a little warm milk and whisk vigorously to temper the eggs
- Once the egg mix is homogenous and warm, pour it in the Milk Pan
- Simmer for another 5 minutes or until thickened, while mixing continuously
Changes
- Changed from 100g to 80g Sugar
- Tried 60g Sugar, Better Sweet level
- Reduced Cornstarch to 30g
- Still too much Cornstarch, sugar, and too little vanilla -> changed to 20g Cornstarch, 40g Sugar, 3 tbsp Vanilla Extract (Maybe more egg yolks)
