Vanille Vla

Ingredients

  • 1 Litre Whole Milk
  • 3 Vanilla Sticks (3 tbsp Vanilla Extract)
  • 40g Sugar
  • 4 Egg Yolks
  • 20g Cornstarch

Instructions

  1. Pour 1 Litre of Milk and vanilla seeds from 3 Vanilla Sticks in a pan
  2. Bring to a simmer and let cook for 10-15 minutes, without letting it boil
  3. In a bowl, mix:
    1. 4 Egg Yolks
    2. 40g Sugar
    3. 20g Cornstarch
  4. Mix until homogenous then add a little warm milk and whisk vigorously to temper the eggs
  5. Once the egg mix is homogenous and warm, pour it in the Milk Pan
  6. Simmer for another 5 minutes or until thickened, while mixing continuously

Changes

  1. Changed from 100g to 80g Sugar
  2. Tried 60g Sugar, Better Sweet level
  3. Reduced Cornstarch to 30g
  4. Still too much Cornstarch, sugar, and too little vanilla -> changed to 20g Cornstarch, 40g Sugar, 3 tbsp Vanilla Extract (Maybe more egg yolks)
